Irish Potato “Nachos”

Irish Potato “Nachos”

2 Tbsp Spirits & Spice Garlic and Butter Extra Virgin Olive Oil 

2 Tbsp flour

¼ cup milk

¼ cup stout (such as Guinness)

2 ½ cup shredded Cheddar cheese

1 tsp Spirits & Spice Bloody Good on Everything 

Spirits & Spice Smoked Rosemary Saltto taste

Pepper to taste

1 16-oz bag frozen tater tots cooked according to instructions

6 strips cooked bacon, chopped

2 plum tomatoes, diced

2 Tbsp finely chopped chives

 

Directions

  • Make beer cheese sauce: In a small saucepan over medium heat, heat Spirits & Spice Garlic and Butter Extra Virgin Olive Oil. Whisk in flour and cook about 1 minute until well incorporated.
  •  Add stout and milk and bring mixture to a boil, reduce heat slightly. Stir in cheese and cook until the cheese is melted.
  • Season with Spirits & Spice Smoked Rosemary Salt, Spirits & Spice Bloody Good On Everything, and pepper.
  • On a large serving dish, scatter about half of the chips / potatoes. Pour about half of the beer cheese on top then sprinkle with chives and chopped bacon. Repeat with remaining ingredients and serve immediately.
